Today I learned about Merisopedia, a genus of cyanobacteria. Species in this genus grow in rectangular grids. They look like this:
Merisopedia species can be found all over the planet, including the Amazon, China, and Nigeria.

Can they be used to make labneh?
ReplyDeleteProbably not, thought they might end up in there by accident depending upon how you filter it. You're more likely to find thermophilic lactic acid bacteria like Streptococcus thermophilus or Lactobacillus delbrueckii spp. bulgaricus.
